Quick Fire

I made Dale T’s Grilled Scallops with XO-Pineapple Fried Rice from Top Chef: The Quickfire Cookbook. It was a little too spicy as the scallops are cooked in chili oil. The fried rice was excellent. For prep and cooking it took me at least 40 minutes. The quickfire challenge when this was made on Top Chef was 15 minutes. Yikes.
